This mix is formulated to produce a crispy edge and a moist, tender crumb, particularly when baked in cast iron skillets, including the 10.25-inch Lodge cast iron skillet. The ingredients typically include cornmeal, enriched flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), leavening agents (sodium acid pyrophosphate, sodium bicarbonate, corn starch, monocalcium phosphate), sugar, and salt.
